Feeling adventurous? Try a grass-fed Beef Tongue raised right here in Conejos County. Some people consider this cut one of their favorites and a rare treat! It is a local favorite in tacos, known as Lengua tacos. Beef Tongues are $10 and weigh 2-3 lbs.
 
This pasture-raised beef is raised by our neighbor, Randy Porco @randyporco, who is an outstanding steward of his land. He gives his animals a wonderful life sheltered under trees all while creating habitat for wildlife and building soil health. Randy stands out for the care he takes, not only of his cows but also of the wildlife and entire ecosystem.
